Steak | Ribeye Steak on Charcoal Grill

Ingredients:

Well-marbled ribeye

Dale's Steak Marinade/sauce

MOJO Beef Rub

MOJO BBQ Rub

Mixture of Hotty Toddy Climax AP and Cow Whisperer ground for a finishing rub


Trim the excess fat and any loose pieces of meat from the steak. Tie is with butcher's twine to keep the muscles from separating during the cook. Drizzle a small amount of Dales onto the steak and rub it in. Let it sit for a few minutes while you fire up the grill. I highly recommend adding Grill Grates to your grill for steaks. You want the grill to be sitting at 500-550 degrees. After the steak has set for about 10 minutes add a semi-heavy coat of MOJO Beef rub. Follow up with a coat of MOJO BBQ rub. Flip the steak over and repeat the steps (don't forget to show the edges some love too.)

Check your grate temp. My Grill Grates run about 100 degrees hotter than the grill temp.(about 625-650 degrees.) Place the steak on the grates at an angle for those diamond shape grill marks. I added a bacon weight for consistent marks. You can also give it a firm press with your hand for a few seconds. Set a timer for 1 minute and 21 seconds (exactly)! When the timer dings, twist the steak 90 degrees to finish that grill mark pattern. Add the weight again and go another minute and 21 seconds. Remove the steak and scrape the grill grates before the flip. Place the opposite side of the steak on the grill in the same manner as before (no bacon weight this time) and follow the same instructions as before. After all your twists, the steak will be sitting somewhere around 100 degrees internal.

This is when I place the steak on a raised rack off the grates for a more even cook. I will probe it and take it off at 129 degrees for medium doneness (which is what is desired in SCA comps) I prefer mine a little rarer, but you do you. Allow the steak to rest. The temp will continue to rise. Pour the jus over the top and add a finishing rub for a little pop. I used Hotty Toddy Climax AP and Cow Whisperer in my trusty Amazon thumb grinder (get you one.) Slice that bad boy and eat up!!
