Spatchcock Chicken with Cilantro Lime Sauce | On the Weber Kettle

This Chicken recipe is going to knock your socks off. I'm going to show you how to spatchcock the bird to reduce cooking time on the Weber Kettle grill. We're going to mix up a Cilantro Lime Sauce that is great on absolutely anything. Let's get started. Here's what you need:

Dressing:

3/4 cup cilantro

1/2 cup green onion

1/2 of an avocado

1 cup of sour cream or crema

2 ounces of water

2 tbsp of olive or avocado oil

Juice of one lime

Combine all ingredients in a blender or food processor and blend until smooth. (Refrigerate until needed)

Chicken: Spatchcock the bird. Set up grill for indirect cooking at 350 degrees. Add a chunk of pecan wood over the fire for smoke. Season the bird with MOJO GPS (coming soon) and MOJO Beef (not just for beef any more). Cook for approximately 1 hour or until the breast temps at 160 degrees internal. Allow the chicken to rest under a foil tent for 10 minutes. Cut and enjoy! Don't forget to slather it in that Cilantro Lime Sauce. It was awesome and I don't even like chicken!
